Perfect Sweet Potato Fries

Happy Friday sweeties! Whether you celebrated Cookie Friday or Indulgence Friday or I-Worked-My-Ass-Off-All-Day-Let’s-Get-Crazy Friday, [so I made that one up, guilty.] I hope you had a great one!

Mine was rather fantastic, after I dealt with a few, erm, issues. To elaborate, I may or may not [read, I totally effing did] have dropped my phone into a big glass of water last night when I got to work.

Yeah, not my best move. At all. Since I was at work, I couldn’t do the “put it in a bag of dry rice” trick, and I didn’t get home until five hours after it happened. I tried it over night, but no luck ):

Fortunately, I have an insurance policy on my phone, and they’ll replace it [thank God!] because after two years of being a die-hard BlackBerry addict, I’m not ready to go to this:

DSCN0452

I get the chills just looking at that. How do I tweet from my phone? Check my email? Google every question that pops into my head?! I want my BlackBerry back….

How about the positives of my day?

Workout

I wasn’t really feelin’ a run today, so I stuck with the 21 Day Yoga Challenge (so obsessed with this… I may never stop!) and then did a leg workout I found in Fitness magazine. I’ve done this once before, and SERIOUSLY my legs were sore for three days! Hopefully I’m stronger now so it won’t hit me so hard this time (;

Food

I went to the wireless store early this morning. So early, in fact, they hadn’t even opened yet. I decided to kill a little time at Starbs with my favorite bev…

DSCN0446

Venti Passion iced tea – best. possible. order. If I ever stray from this, it’s to an iced coffee… and we all know how that turned out.

When I got home, I knew the only thing that was gonna make me happier would be a nice simple breakfast [that statement made me sound like a brat. Sucksss.]

DSCN0448

TJ’s High Fiber cereal with almond milk mixed with a scoop of vanilla Sun Warrior protein powder. And since I’ve had one of those killerrrr peaches every single day since I got home, I had to slice one up and top the cereal with it! Yumssss.

DSCN0450

No picture of lunch today, but I’ve got somethin’ even bettaahhh. COOKIEEEES!

I used Gabriela’s recipe for Double Dark Chocolate Peanut Butter Cookies and made a couple adjustmentsss:

– 1 c whole wheat flour
– 1/4 c Sucanat [I used 3T of brown sugar]
– 1/4 tsp sea salt
– 3 T Hershey’s Special Dark Chocolate cocoa powder (regular works as well, but dark tastes amazing)
– 1/2 c (2 oz) salted roasted peanuts, chopped [omitted]
– 1 tsp baking powder
– 1/2 tsp baking soda.
– 1/4 c + 2 T agave nectar [used honey instead]
– 1 tsp vanilla
– 3 T canola oil [used Smart Balance instead]
– 1/3 c chocolate peanut butter (I used PB&Co. Dark Chocolate Dreams)

-addded in 1/2 dark chocolate chunks

The other day, my brother told me how much he liked dark chocolate, but didn’t understand why he liked it so much [weird, I know]. Anyways, he has a big lax tournament this weekend so I wanted to make something for him and my Dad cause they’ll both be super busy! Plus, this cookie included two of my fave things – peanut butter and dark chocolate. Let’s get crazy.

DSCN0449

Fan. Tas. Tic. Plain & simple!

The rest of the day was super low key, just hung around and didn’t do much!

Since I didn’t have much of anything going on, I decided to post a tutorial/recipe situation… for one of my FAVE meals!

Perfect Baked Sweet Potato Fries

Serves 1 as a meal, 2 as a side

  • 1 medium sweet potato
  • 1T oil of choice (I use coconut, but olive is a favorite too!)
  • Sprinkle of sea salt

First, preheat the oven to 425 degrees Fahrenheit. While it’s warming up, start slicing your sweet potato.

DSCN0455

Cut into thin, uniform strips so that the fries will cook evenly (you’ll have a couple little nuggets, but don’t worry about it.)

DSCN0457

Cover a cookie sheet with parchment paper and spread sliced fries evenly across. Distribute oil over slices as evenly as possible. (Side bar, I used a spray bottle tonight, so I sprayed them while they were on the sheet. When using coconut oil, I’ll put all the wedges into a big mixing bowl and pour the oil over, just so it covers it a little more thoroughly.) When wedges are all oiled up [that sounds kinda gross] sprinkle them with a little bit of sea salt, just to taste, and remember you can always add more later!

I bake the fries for 25 minutes [at least], but I let them go to 30 once and most of them were burnt so be careful!

DSCN0463

If all goes well, you’ll end up with this little beauty! A wholeeee plate of sweet tater fries and ketchup for dippinnn (:

Happy tummy ensued.

Oh right. Then this happened again.

Lovvvesss.

Exciting Stuff!

So, for the first time since late August/early September (excluding the two weeks around Christmas) I won’t be going into work Saturday morning!!! During the year, Saturday mornings usually bring in all 8ish teachers on staff to handle the seven+ classes we teach in a span of less than four hours. Yeah. Busy busy bees! As much as I love my job, it’s gonna be nice to go at my own pace on a Saturday morning. Plus, it’s not like I’m entirely off on Saturday – I’ve got parties to work in the afternoon!

More excitement? I updated my Twitter background (:

And it was kind of an accident! Oh well, I like it now anyways!

Chocolate or vanilla?

Was I subtle enough in my questioning? (;

Have you ever worked weird hours?

My friends and I at work were exhausted after an eight hour shift… and then we realized that people with desk jobs work that every single day. Whooooops!

Hope yall have a great night!

Sunnnshine

I think that this video fits nicely with the day, don’t you?

Although the sunshine wasn’t goin’ too strong early this morning, I still managed to have a nice breakfast!

DSCN0353

A yummy protein cereal bowl! 1 cup of kashi go lean [so obsessed!] with almond milk mixed with a scoop of Sun Warrior, then topped with sliced strawberries (: I know lots of people say that cereal can’t hold them over as far as breakfast goes, which is why I think it’s so important to squeeze in that protein! I know that many people in America tend to overestimate how much protein they need, but that doesn’t mean its something to forgo all together. This bowl actually held me over for about three and a half hours! It was sahhh weet!

When lunchtime rolled around, I had planned on having some channa masala… but when I walked into the kitchen, all I could think about was pasta. Now, I don’t know if yall have read this post from Amanda of Running with Spoons yet, but if you haven’t, stop reading now and go check it out! Sure, channa masala is great and all – but my body wanted pasta. Pasta and ketchup, specifically.

DSCN0358

See, when I was little, we had all these au pairs – live in nannies, basically – from South Africa. And all of them put ketchup on everything. Grilled cheese, scrambled eggs, macaroni & cheese, pasta… so I learned to eat all these things with ketchup! Now, I’ve grown out of most of these things, but the ketchup has pretty much been a staple in my diet – I. Love. It.

And even though this carby & delicious bowl of pasta wasn’t what I had planned on eating today, it was exactly what I wanted. I used to avoid pasta because I thought I wouldn’t be able to have any portion control around it – and I can’t believe I’ve stayed away for so long. It’s so wonderful to see you again, pasta (: Since this was exactly what I wanted to eat, I was so mindful of eating it. I even realized with a few bites left that I was full, and that I didn’t need to finish every last bite. Maybe I’m reading too much into this, but to me, this bowl of pasta is like… recovery. It’s not putting obsessive amounts of thought into what I should eat, of what I’ve planned my meal to be. It’s living in the moment, accepting that pasta is god damn fantastic, and I don’t need to run eight miles in a day to “deserve” to eat it.

In fact, I don’t need to run period to earn a lunch like this. Which is incredibly fortunate for me, because some MAY-JOR ankle pain caused me to postpone the run I had planned for this afternoon. I really thought about running through the pain, but I’m glad I made the decision to just do yoga instead. My ankle was giving me a problem just walking around the house, and as guilty as I originally felt for skipping it, I know it was the right decision for me.

Post-yoga and strength, I felt a little fruity snack action was in orderrr:

DSCN0357

Banana with fruit spread & two Medjool dates! I love fruit (: NOMMMS

Then I basically just lounged around the house until I was hungry for dinssss. The only time I left my house today was to pick up my brother from exams. #party

DSCN0362

Dinner was very lunch-inspired. I planned on a salad with baked tofu… but I couldn’t get excited about it. Pretty soon, a sandwich was the only thing that I wanted. I sliced up a Fuji apple on the side with some yellow bell pepper matchsticks to go with my peanut butter & jam sandwich. I think I have a new favorite jam: 365 Fruits of the Forest Fruit Spread! It’s got strawberries, black cherries, raspberries, and blackberries in it! I’m rather obsessed (;

DSCN0363

MONAYYY SHOTTT. Get at me.

I’ve got work early tomorrow morning, so I’ll be signing off soon! Hope yall had an excellent & indulgent Friday! Oh, and HAPPY DONUT DAY?!

Do you like ketchup?

LOVE LOVE LOVE LOVE LOVE

Did you partake in Donut Day?

I didn’t, but my brother & his friend definitely did (:

Sunny to Stormy

Good morning bloggies!

Happy Monday (: I have to say, Mondays are much easier to handle now that there isn’t a school day attached to it. I have a feeling I’m in for a rude awakening come September!

Last night was weird – I could hardly fall asleep, even at midnight! I usually turn in around 10:30 or 11, so I couldn’t believe I was still awake! It must have been that Harry Potter (; Earlier in the day, my dad had mentioned that it was gonna rain pretty consistently until next Sunday (aka my graduation day. no thank you.) Now, my dog Duke hates storms, and usually hides when there’s one going on. Where does he hide, you ask?

DSCN0239See him? How about a close up:

DSCN0233Precious little baaaaaby (: Of course, this means my clothes will effectively never be clean. #suckstosuck. I guess it’s better than him being on my bed!

Monday morning honestly couldn’t come fast enough – I hateee lying in bed without sleeping! I feel like I should get up and do something productive, and sometimes, I do! Like last night, I paged through the new issue of Fitness for like thirty minutes before I finally felt sleepy (: Horrible way to spend the night, right?

Monday Morning

The first thing I did this morning was a quick session of Jillian Michaels’ Yoga Meltdown – SO SO SO GOOD. My arms and legs are kinda killing me and screaming right now, but it feels maaagnificent (: Is it weird that I don’t mind that at all?! I planned on doing the Yoga Meltdown two times, but I felt sufficiently worked out after just once! Plus my tummy was grumbbblin haha

DSCN0241I originally thought I wanted something more, but once I finished the bowl I knew I was fine! This is a good pour of Kashi GoLean(the best cereal ever.), a handful of thawed berries from TJ’s Very Cherry Berry Blend, and a pour of almond milk to cover it all! I love how the almond milk filled up the center of that blueberry up there! Hahah too funny! PS, the cherries were the ULTIMATE part of this bowl, I forgot how much I love them!

Sunday’s Outfit

So, one of my goals for May was to buy three new outfits so that I wouldn’t be wearing Nike running shorts all day everyday. (Seriously, it was getting outta control!) Here’s my outfit from yesterday, purchased on my shopping trip last Wednesday!DSCN0210Dress: Forever 21

Shoes: Tory Burch

-Necklace: Elsa Peretti for Tiffany’s

Hope yall have had a good morning! I think I might be going to see Water for Elephants soon! See ya later tonight (:

What’s your favorite fruit?

Have you seen Water for Elephants?
