[I’m Ridin Solo]

Happy Wednesday (:

Embarrassing story? I still have to sound out Wednesday when I spell it! “Wed-nes-day, got it.” Or sometimes — “To-get-her.” –> Same thing I did in first grade.

#Classy.

But here’s some EXCITING news!!! This morning at 9:15, I had my final presentation about my Senior Project! For those of you who don’t know, my project was a two-parter: first, I spent two weeks helping out in my friend’s mom’s preschool classroom, checking the kids’ work, keeping an eye on them on the playground, stuff like that! And honestly? I absolutely loved it! So much so that I keep reevaluating what I wanna study next year! YIKESS. [Currently between psychology, nutrition, & now early ed, I guess?]

But of course, I needed some fuel to get me going before the presentation!

DSCN0272Orange+vanilla creme rooibos tea from WF; and the ULTIMATE oatbran!!

  • 1/2c oatbran cooked in 2 1/2c water
  • 1/4c frozen blueberries (stirred in after like three minutes of cooking)
  • 1/4c peanut flour
  • 1T ish of strawberry fruit spread
  • drizzled with 1T of dark chocolate sauce! [1T cocoa powder, stevia, sea salt, +water]

The only problem with this breakfast? I didn’t even have time to finish it!! I ate a little less than half, then had to jet to make it on time ): Oh well, I stuck it in the fridge and it was just as good at 12:30!

After the presentation was over,  I went to a showing of this…

Water for ElephantsWater for Elephants!!! I read this book over spring break, and it was so incredible! I loved the book, and I still think it was better, but Reese Witherspoon, Christoph Waltz [poor guy always gets such crazy characters! He’s good at it though…], and even Rob Pattinson were fantastic in their respective roles. The most impressive thing about the movie? The setting! Usually, I don’t pick up on those kinda things, but they literally created the most exquisite scenes and locations… it was like a whole other world! I was totally blown away! Like Julie said, the animal abuse scenes were really hard to watch, but they really rounded out the story. Also, I was annoyed that they left out the character of Uncle Al… they just kinda lumped him and August together as one person. Not quite….

Post movie, I finished my breakfast [and with practically no stomach grumbling! What is going on here?!] I decided to knock out my workout early instead of waiting until tonight and did a quick thirty minutes on the elliptical. I set the resistance to 3 [on a scale of 1-20] and went with my usual speed and I was so shocked when my calves started burning! I had totally forgotten that I changed the resistance and spent like five minutes trying to figure out why I was already aaache-in. After the elliptical, I spent some time with Jillian with the Yoga Meltdown! OUCH.

DSCN0279Lunch-skies! Cream soda Zevia & TJ’s Soup –> stuck in the fridge when I left this morning… such a good decision since it’s like eighty degrees out now (: This soup was soooo good! It tasted exactly like what I wanted – chock full o’ veggies with a little bit of seasoning!

Anyways, my high school’s lacrosse team has a playoff game tonight! I’m off to go watch it soon, so dinner had to happen before:

DSCN0283Potentially the biggest salad I have ever eaten! We’ve got butter lettuce/spinach, tomato slices, snow peas, yellow bell peppers, carrots, black beans, and a ring of roasted zucchini. The zucchini was totally the highlight here! I sliced it up, drizzled with about 1 T of olive oil, a sprinkle of cumin, and a faaair amount of salt [no worries, my blood pressure is craaaay low!] and roasted at 425 for about 20 minutes! My dad walked into the kitchen and asked me like five times “What smells so good?!” NBD.

Alright, I’m off to go cheer the team on, but here’s my outfit of the day!

  1. wow your bowl of oat bran looks amazing. It is practically popping out of the bowl 🙂
    Your senior project sounds like just the perfect thing to help you figure out what you want to do in life. Nothing like first hand experience to do just that. When it is hot, I love on the smoothies!
