June Goals

Happy [almost] June everyone!!

I know it’s still the 31st, but I wanted to get my June goals up before the month actually started (:

I wasn’t totally honest about keeping to my goals last month (striiiike out) so hopefully this month goes a little bit differently! Here we go!

June Goals

1) stretch every day

As any ex-gymnast can attest, the feeling of no longer being able to do your dominant leg split or your bridge is awful – even if I wasn’t super flexible to begin with! Whether it’s yoga or just stretching, I wanna at least get back in the swing of it!

2) strength train two times a week

At least one day of body weight training, because that’s what I’m most used to and what I know works best for my body.

3) buy and wear two new outfits

And preferably things that aren’t floral print dresses. I bought three of those last month.

4) two forms of cardio every week

Running, spinning, elliptical, etc!

5) read at least two books

After all, I’ll need something to do while I’m poolside!

6) try one new recipe every week

Whether it’s from a cookbook or from a blog, I need to expand my culinary horizons! Shoot your favorites my way for some assistaaaance (:

Happy Saturday blenddds (:

How has it gone for yall so far? It is sooo nice and sunny in Cincinnati right now! I love ittt (: Hopefully, the weather will keep up til tomorrow!

So I sortakindamaybedefinitely forgot and ran out of time to post in the last few days! Whoooops! I’m not perfect at this yet, but whateverrr. But I’ve been too excited to focus on posting these past few days! Lets do a quick little run down (:

FRIDAY: Senior Awards Assembly, Graduation Practice, & Alumni Induction Ceremony! I’m officially an alum — I’ve got the mug to prove it (:

110528-171412

(please ignore the messy hair…. hadn’t showered yet!)

SATURDAY: work, hanging out with friends, working out, spending time with ze family at my brother’s lax game! [grandparents are in town for the graduation!]

SUNDAY: 12:30 — lifer picture [kids who have been at the school for 12+ years], class picture at 1, then GRADUATION MASS starts at 2! I honestly never thought that this day would come… it’s so weird to know that next year, I’ll go off to college and not back to the small school I’ve always known where everyone knows everyone else. The weirdest thing is it totally hasn’t sunken in yet! After the ceremony, there’s a reception at school, and one of my best friends is having a party at an old downtown hotel and I can’t wait!

MONDAY: Happy Memorial Day! My grandpa that’s in town is a World War II vet so we’ll be spending tons of time with him!

But how about a recap of the last few days – when I actually knew where my camera was slash remembered to use it, that is (:

012

OH HEY THERE, dessert from Wednesday (: You were great, you know that right? Another bread bowl from the wonderful+incredible Gracie! This time, I actually used whole wheat flour, didn’t microwave the banana beforehand, and topped it with nut butter+chocolate paste! Oh… and got just a little bit impatient, so I didn’t bake it all the way! #whoops #thatsmylife

Now, I don’t wanna say that I had a burst of genius Thursday morning, but….

015

I MADE VEGAN FRENCH TOAST. WHAAAT?! Oh yes I did, and stuck a grilled banana in the middle. I died. And then begged for more.

Vegan French Toast

  • Two slices sprouted wheat bread
  • 2T non-dairy milk (unsweetened original Almond Breeze for me)
  • 1t vanilla extract (or a mix of almond+vanilla)
  • toppings – WHATEVER YOU WANT!

1. Mix milk and vanilla extract in a small bowl.

2. Place bread in a shallow dish. I used a 9×11 pyrex dish, and it fit perfectly. Pour mixture over bread slices so that they’re adequately covered. As long as there’s milk mixture sitting ontop of the bread, you’ll be fine.

3. Flip bread in dish so both sides get soaked.

4. Put bread in a heated (medium heat works) skillet with soy butter or coconut oil or cooking spray.

5. Cook for two minutes on one side and flip. Cook for an additional minute.

6. Surrrrrve it up!

016

I see you in there, banana. And I’m excited. I topped mine with chocolate paste & strawberry fruit spread! I’m seriously obsessed with this whole banana+chocolate+strawberry combo. OHHH YEAH. #getonmylevel

I need to stop using twitter hashtags outside of twitter.

#noidont #littlerebel

021

Lunch (from Thursday, I think?) was roasted cauliflower, a salad beast, and Zevia. I’d never had roasted cauliflower before, and OH MY GOD IT WAS SO GOOD. Like seriously?! I only did it for like 15 minutes too! Impatient, I know. Salad had spinach, bell peppers, black beans, tomatoes, carrots, and maybe something else? I totally can’t remember! This lunch made me soooo happy and I was soooo glad it stopped raining long enough for me to take a picture.

SO embarrassing story? I basically haven’t taken any foodie pictures since then… Oopsies (:

Anyways, I’m off to have dinner and then go to my brother’s lacrosse game! Playoffs!

What’s your favorite vegetable to roast?

Are you addicted toDo you use twitter hashtags?

Have a happy Saturday night!

[I’m Ridin Solo]

Happy Wednesday (:

Embarrassing story? I still have to sound out Wednesday when I spell it! “Wed-nes-day, got it.” Or sometimes — “To-get-her.” –> Same thing I did in first grade.

#Classy.

But here’s some EXCITING news!!! This morning at 9:15, I had my final presentation about my Senior Project! For those of you who don’t know, my project was a two-parter: first, I spent two weeks helping out in my friend’s mom’s preschool classroom, checking the kids’ work, keeping an eye on them on the playground, stuff like that! And honestly? I absolutely loved it! So much so that I keep reevaluating what I wanna study next year! YIKESS. [Currently between psychology, nutrition, & now early ed, I guess?]

But of course, I needed some fuel to get me going before the presentation!

DSCN0270

DSCN0272Orange+vanilla creme rooibos tea from WF; and the ULTIMATE oatbran!!

  • 1/2c oatbran cooked in 2 1/2c water
  • 1/4c frozen blueberries (stirred in after like three minutes of cooking)
  • 1/4c peanut flour
  • 1T ish of strawberry fruit spread
  • drizzled with 1T of dark chocolate sauce! [1T cocoa powder, stevia, sea salt, +water]

The only problem with this breakfast? I didn’t even have time to finish it!! I ate a little less than half, then had to jet to make it on time ): Oh well, I stuck it in the fridge and it was just as good at 12:30!

After the presentation was over,  I went to a showing of this…

Water for ElephantsWater for Elephants!!! I read this book over spring break, and it was so incredible! I loved the book, and I still think it was better, but Reese Witherspoon, Christoph Waltz [poor guy always gets such crazy characters! He’s good at it though…], and even Rob Pattinson were fantastic in their respective roles. The most impressive thing about the movie? The setting! Usually, I don’t pick up on those kinda things, but they literally created the most exquisite scenes and locations… it was like a whole other world! I was totally blown away! Like Julie said, the animal abuse scenes were really hard to watch, but they really rounded out the story. Also, I was annoyed that they left out the character of Uncle Al… they just kinda lumped him and August together as one person. Not quite….

Post movie, I finished my breakfast [and with practically no stomach grumbling! What is going on here?!] I decided to knock out my workout early instead of waiting until tonight and did a quick thirty minutes on the elliptical. I set the resistance to 3 [on a scale of 1-20] and went with my usual speed and I was so shocked when my calves started burning! I had totally forgotten that I changed the resistance and spent like five minutes trying to figure out why I was already aaache-in. After the elliptical, I spent some time with Jillian with the Yoga Meltdown! OUCH.

DSCN0279Lunch-skies! Cream soda Zevia & TJ’s Soup –> stuck in the fridge when I left this morning… such a good decision since it’s like eighty degrees out now (: This soup was soooo good! It tasted exactly like what I wanted – chock full o’ veggies with a little bit of seasoning!

Anyways, my high school’s lacrosse team has a playoff game tonight! I’m off to go watch it soon, so dinner had to happen before:

DSCN0283Potentially the biggest salad I have ever eaten! We’ve got butter lettuce/spinach, tomato slices, snow peas, yellow bell peppers, carrots, black beans, and a ring of roasted zucchini. The zucchini was totally the highlight here! I sliced it up, drizzled with about 1 T of olive oil, a sprinkle of cumin, and a faaair amount of salt [no worries, my blood pressure is craaaay low!] and roasted at 425 for about 20 minutes! My dad walked into the kitchen and asked me like five times “What smells so good?!” NBD.

Alright, I’m off to go cheer the team on, but here’s my outfit of the day!

DSCN0277

  • Dress: Anthropologie
  • Sweater: American Eagle
  • Shoes: Steve Madden
  • Necklace: Elsa Peretti for Tiffany’s

Have you seen Water for Elephants?

What’s your favorite thing to eat when it’s hot outside?

Whole Foods Saves the Day!

Hey yall!

Today was sooo nice for me! Since I don’t have to go into classes or my senior project anymore, my dad has been taking my brother to school in the morning, letting me sleep in! Translation: I wake up at 8 instead of 7 (: How is it that I can’t make my body stay asleep any longer than that?! It’s weeeeeird.

This morning, my appetite was acting really strangely. When I woke up, all I wanted was a piece of fruit! I grabbed an apple – and totally didn’t snap a picture – but I knew that would sooo not hold me over, even if my day is pretty open. So I went ahead and sliced up a banana & froze it for a green monster, even though I didn’t really know when I would have it! Around 11, my tummy finally grumbled (two and a half hours on an apple! Who am I?!) and I whipped up this bad boy:

DSCN0256 In the mix!

  • 3/4c almond milk
  • a bazillion handfuls of frozen spinach
  • one sliced frozen banana
  • a handful of TJ’s Very Cherry Berry Mix
  • 1/2t maca powder
  • topping: Vegan Cocoa Sauce (1T Hershey’s Special Dark Cocoa + 1 packet Truvia + water to thin)

I don’t know if this shows how big the smoothie was, but it was huuuuge! I somehow managed to get through all of it though. Ohhh the sacrifices I make.

So last night at work, there was this BIIIIG pandemonium since a tornado watch was sweeping through the Cincinnati area, and everyone at the sports center ended up being moved into the lobby! It’s not a big area, and with kids as young as two and a bazillion parents buzzing around, it was more than a little overwhelming! I did a head count of my girls once a minute because I’m obsessive (: One of my friends showed me the weather radar on his phone, and the area where we were was purple! I didn’t even know that purple was on option on the scale!! I was sortakinda panicked, but everything turned out fine! But on the bright side, the weather today is absolutely beautiful! I went outside for a little and read a book for a while spent time in the S-U-N!

After running a couple of urrrrands [errands. nice grammar.] I started to get a little hungwwyy! The solution?

DSCN0258Not the best quality picture. #happens. But this was a meatball sandwich! It was two slices of TJ’s sprouted wheat bread topped with sliced meatless meatballs, also from TJ’s! (Ps, that is probably my favorite meat-replacement product! Soooo good!) Topped with organic ketchup & a side of sahhhweet corn. I.LOVE.SUMMER.

Lunch was suuuper late, and by the time I was hungry for dinner, I was feeling waay lazy. That means that Whole PaycheckFoods came in to save the day! The hot bar presented me with this little gem:

DSCN0262 Sweet+sour tofu, balsamic grilled veggies, and Asian veggies [which actually were too spicy for me! I left emmm] But other than that, dinner was deeeelish.

BUT LOOK WHAT ELSE I FOUND AT WHOLE FOODS:

DSCN0264Cream soda Zevia!!!! Whaaat! #getatme ! Cream soda was one of my favorite drinks before I cut out caffeine [and soda in general] and I was soo excited to see it in the store I almost yelled out loud! Overreact much? But totally worth it (: and then I decided to snap a picture of this:

DSCN0265 My nails right now! I’m so proud that they’re actually painted right now! Usually I chip it all off and then don’t repaint [sup lazy]. The shade is NARS Orgasm [heheheh] and I’m obsessed with it. NBD.

I kinda forgot to snap a pic of the outfit I had on today, but I DID remember the shoes!

DSCN0260a la Steve Madden – toe nail polish is OPI’s Lucky Lucky Lavender. That’s about all I got for the outfit of the day (: Ohhh well!

I’ve got to finish prepping my presentation for my Senior Project Presentation for tomorrow morning! Have a good night everyoneee!

Do you like green monsters?

YES YES YES SI OUI YUUUSS

Do you like shopping for shoes?

Running, flats, wedges, heels, flip flops, whatever… I love em all!

I’ll see yall tomorrow!!

Sunny to Stormy

Good morning bloggies!

Happy Monday (: I have to say, Mondays are much easier to handle now that there isn’t a school day attached to it. I have a feeling I’m in for a rude awakening come September!

Last night was weird – I could hardly fall asleep, even at midnight! I usually turn in around 10:30 or 11, so I couldn’t believe I was still awake! It must have been that Harry Potter (; Earlier in the day, my dad had mentioned that it was gonna rain pretty consistently until next Sunday (aka my graduation day. no thank you.) Now, my dog Duke hates storms, and usually hides when there’s one going on. Where does he hide, you ask?

DSCN0239See him? How about a close up:

DSCN0233Precious little baaaaaby (: Of course, this means my clothes will effectively never be clean. #suckstosuck. I guess it’s better than him being on my bed!

Monday morning honestly couldn’t come fast enough – I hateee lying in bed without sleeping! I feel like I should get up and do something productive, and sometimes, I do! Like last night, I paged through the new issue of Fitness for like thirty minutes before I finally felt sleepy (: Horrible way to spend the night, right?

Monday Morning

The first thing I did this morning was a quick session of Jillian Michaels’ Yoga Meltdown – SO SO SO GOOD. My arms and legs are kinda killing me and screaming right now, but it feels maaagnificent (: Is it weird that I don’t mind that at all?! I planned on doing the Yoga Meltdown two times, but I felt sufficiently worked out after just once! Plus my tummy was grumbbblin haha

DSCN0241I originally thought I wanted something more, but once I finished the bowl I knew I was fine! This is a good pour of Kashi GoLean(the best cereal ever.), a handful of thawed berries from TJ’s Very Cherry Berry Blend, and a pour of almond milk to cover it all! I love how the almond milk filled up the center of that blueberry up there! Hahah too funny! PS, the cherries were the ULTIMATE part of this bowl, I forgot how much I love them!

Sunday’s Outfit

So, one of my goals for May was to buy three new outfits so that I wouldn’t be wearing Nike running shorts all day everyday. (Seriously, it was getting outta control!) Here’s my outfit from yesterday, purchased on my shopping trip last Wednesday!DSCN0210Dress: Forever 21

Shoes: Tory Burch

-Necklace: Elsa Peretti for Tiffany’s

Hope yall have had a good morning! I think I might be going to see Water for Elephants soon! See ya later tonight (:

What’s your favorite fruit?

Have you seen Water for Elephants?

Til the World Ends

Happy Sunday!

So surprise – THE WORLD DIDN’T END! Never saw that one coming, did ya? Nope, didn’t think so (:

Of course, that meant that I had to have a little celebratory breakfast for this Sunday-Funday!

DSCN0203

Voluminous oats made in the style of Carrie… ps, if you wanna know how to make KILLAAAH delicious oats & laugh your butt off at the same time, check her tutorial out. I died.

This was supppah tasty though! I cooked 1/3c oat bran in 1 2/3c water (for like five or six minutes? I forgot!) and it TRIED to explode on me. And kinda did for like two seconds… but I fixed it (: #winning! After letting it sit for a couple minutes, I stirred in 1/4c peanut flour (cause I’m out of protein powder! Sad!) and then topped it with a BOATLOAD of cinnamon and half a banana I had sitting in the fridge. It might have been 80degrees in Cincy this morning, but that was SOOO not gonna stop me!

You might be thinking… “So why exactly do you have only HALF a banana in the fridge?” And the answer is so, so simple – and so, so delicious! Last night’s dessert was courtesy of Gracie, in the form of a pumpkin-banana-bread bowl. TADAAAAA:

DSCN0201So it doesn’t look as pretty as Gracie’s. But I’m fine with that. It’s what’s on the inside that counts after all! And inside this bad boy was 10+ g of fiber and over 30g protein!! (I used peanut flour instead of ww flour cause I was out!) This was so good, I had to stop and slow down so I didn’t scorch the eff out of my tongue while eating it! Really, I just wanted to show yall a picture of it cause I was so proud that it even came out of MY oven!

Back to Sunday! After breakfast, my dad told me that it was gonna be pretty rainy later in the day, so I decided to knock my run out early! I went to a five-mile trail pretty close to my house, and even though I walked a lot of it, it was still a great workout! My HR like didn’t even drop below 150! The five miler lasted about an hour, which I’m totally fine with! Plus, it was actually really fun to get out of the house and just be alone for an hour (: The not so hot part of my run? The blister I scored on my left Achilles tendon. Sah-weetttt. Good thing I was already planning on a yoga day tomorrow haha

Post-run lunch was typical: the daily salad beast!

DSCN0205Spinach, yellow carrots, yellow bell peppers, tomatoes, black beans, and Annie’s Lite Honey Mustard dressing! (I’m obsessed with this!) So, quick confession: the game plan was to use chickpeas in this salad, but then I had YELLOW peppers, and even YELLOW carrots, so the natural choice was…. black & yellow (:

One of the first things on my to-do list for the day was grocery shopping! Which I actually love doing, so it wasn’t TOO much of a chore! I stopped by Trader Joe’s – which is WAY less crowded on a Sunday as opposed to a Saturday – and then hit up Whole Foods on the way home! Of course, I had to go for a Kombucha once I made it in there, my immune system just needed it (; But I was drinking it while I was driving home & it totally almost fizzed all over the place on me! I was kiiinda freakin out haha!

DSCN0207 This wasn’t my favorite flavor, but it was still pretty good!

Another task on the to-do list? Graduation announcements. Blech. I spent about an hour hand-addressing and bugging my dad to call people for addresses! I got almost all of them finished, except for one or two! They’ll be getting mailed out tomorrow, which is probably a good thing since my graduation is ONE WEEK AWAY! That’s right, May 29th is the big day! The better news? My dress will be finished with being hemmed on Friday, just in time! I’ll totally post TONS of pics the Monday after, since I’ll be at a graduation party all night Sunday!

All that addressing took it out of me, so I made one of my favorite snacks: chocolate toast!

DSCN0208 Two slices TJ’s Sprouted Wheat Bread with healthy vegan chocolate sauce!

  • -1T cocoa powder (Hershey’s Special Dark Cocoa is the best!)
  • -1 packet Stevia (or other sweetener)
  • -1-1.5 T water (the more water, the thinner the consistency)

I based this off of Carrie’s fudgie, and literally make it at LEAST once a day! It’s so good!

My dad & brother were off to an open house for his summer lacrosse team, so I was on my own for dinner. I had about 1/2c of TJ’s steamed lentils left in the fridge, so I decided on a Lentil Loaf for One, inspired by Caroline of the Broccoli Hut!

DSCN0219 I used 1/2c lentils, 1/3c oat bran, & 3T pasta sauce. After baking for about 20 ish minutes, it was alllll ready! If I was a good blogger, I would have taken the bowl outside, waited to put on ketchup, and tried to get a really pretty picture. But…. the bowl was really hot… and I didn’t feel like it (: So this is as good as yall are gonna get, sorry!

Anyways, I’ve got a date with the Harry Potter marathon on ABC Family…. and potentially an inside-out peanut butter cup cake (a la Carrie again. Maybe I should stop stalking her recipe page. Probably not though.)

MORE EXCITING NEWS…. I ordered my first bag of Sun Warrior today!! I have no idea when it’ll be here… but I’m still supaaah pumped!

What’s your favorite way to cook oats?

-I know tons of people love Kath’s Whipped Banana, but I’m really loving this oat bran!

What’s your favorite flavor combo?

The pumpkin-banana-peanut butter thang I had goin’ on last night was AH-MAZING.

Have you tried Sun Warrior?

-I. CAN’T. WAIT.

Have a happy Sunday!

Samantha
